Sweet Potato and Coconut Scrapes Sandwiches

Another one of the easiest breakfast ideas to go that I have come up with is this sweet potato and coconut scrapes combo. (Pat on the back)

Ingredients

  • 1 or 2 Sweet potatoes
  • 1 cup of coconut scrapes
  • A pinch of salt
  • Pepper (Additional)

Instructions

  • Wash and cut the sweet potato into slices.
  • Add a pinch of salt.
  • Bake them in the oven till they become tender. (Stick a fork to be sure)
  • Let them cool and refrigerate.
  • Take the sweet potatoes out of the fridge in the morning.
  • Take one slice and put coconut scrapes as you need and top it with another slice.
  • You can add pepper if you prefer.
