Sweet Potato and Coconut Scrapes Sandwiches
Another one of the easiest breakfast ideas to go that I have come up with is this sweet potato and coconut scrapes combo. (Pat on the back)
Ingredients
1 or 2
Sweet potatoes
1
cup of coconut scrapes
A pinch of salt
Pepper (Additional)
Instructions
Wash and cut the sweet potato into slices.
Add a pinch of salt.
Bake them in the oven till they become tender. (Stick a fork to be sure)
Let them cool and refrigerate.
Take the sweet potatoes out of the fridge in the morning.
Take one slice and put coconut scrapes as you need and top it with another slice.
You can add pepper if you prefer.
